Inspiring our people to be the best they can be is essential. We believe in recognising people who not only demonstrate our core values but go above and beyond to prioritise our New Forest Guest no matter what the situation. Our kitchen structures vary across our collection however, on the whole, we take a traditional approach to the chef roles. From Commis to Executive Head Chef we actively encourage learning and development and support creativity and innovation from our talented team members.
We are committed to encouraging aspiring chefs, understanding our fresh produce and local ingredients allow our kitchen teams to create really inspiring and delicious food. We have a number of exciting apprenticeships from beginner to more advanced levels. Our food and beverage superstars really know how to create magical dining and event experiences. Hard work and physical endurance is demonstrated daily by our fantastic housekeeping teams. This department requires a keen eye for detail balanced with the ability to turn around a room with speed. Care and due diligence are vital traits of our people who take ownership of ensuring rooms are beautifully presented, bathrooms sparkling and sheets are crisp.
The importance of this department is not underestimated by our managers and leaders, we know Housekeeping experts are vital to help us reach our goals and believe in supporting and developing capability in running this crucial cog in our wheel.

My role entails having an overview of The Drift and making sure everything is running smoothly. My favourite part of my job is interacting with guests and The Drift’s busy environment provides me with ample time to grow my hospitality experience. You couldn’t find a more picturesque spot to work than The Drift and Beaulieu Inn. The New Forest Ponies and Donkeys on our doorstep are certainly popular with our guests.

My job entails making sure reception runs smoothly and to support the team in whichever way I can. I am also there to support our other receptionists and ensure that our guests are having an amazing experience. I like being able to with a variety of people, guests and team members and I love that no day is the same. I also like that there are always opportunities to improve and learn new skills. I love our Beaulieu location as it has stunning scenery and all the animals that come with it. It is also nice and peaceful.

I have been working at Burley Manor for eight years and I love it. I am responsible for keeping rooms and public areas clean. I feel appreciated in my role and I am an extremely passionate person and my role motivates me hugely. My role encourages me to manage my own priorities, whilst understanding wider business responsibilities. It is a huge sense of achievement when guests personally thank me and its wonderful to welcome returning customers, knowing you played a part in their positive experience. My job is not always easy, but I know as a team, we will always get the job done.

Being an events manager, my job is very versatile in that no day is the same, it involves a lot of communication between the team and with the guests. I take a lot of pride in making sure that every event runs smoothly and guests are leaving happy with unforgettable memories from the day. My job differs from day to day, I enjoy moving around and being able to help the team wherever needed. My favourite event to run has to be a wedding, you get to connect with every bride and groom, building trust and a repour with them. There is no greater feeling than seeing their wedding day from start to finish, enjoying every moment with them knowing that you helped make there day so special. Bartley Lodge is a lovely location at the heart of the New Forest, it is close to amenities as well as being very remote to suit every guest needs. I love working in such a beautiful location, also being part of a collection, no location is the same. It creates a nice sense of teamwork when working with other hotels in the group. We all help each other and have a close relationship. Overall New Forest Collection is a lovely group to work for, having been promoted twice within the company in 2 years this shows they are focused on driving success and nobody goes unnoticed.

I have worked at New Forest Collection for five years. My role as Head Chef means I am responsible for creating all menus at Forest Lodge, using as much local and fresh produce where possible. I am originally from Italy, where home-cooking and food is very much part of everyone’s life, so it was important I find a team who’s values and family culture aligned with mine. Working at Forest Lodge, we are all one large team; we stick together, have fun and work hard.
